Once the alcoholic fermentation has taken place and the wine has been macerated for three weeks, malolactic fermentation takes place in new oak barrels known as “Allier” and “Pennsylvania” barrels. These are situated in an old underground bodega where the wine will remain with the lees for at least 12 months. The wine does not undergo any kind of fining or stabilizing treatments before it is bottled in December. |
